Oden comes from the word dengaku which is simplified to "den" and adds "o". Dengaku was popular during the Muromachi period (1336-1573), which was a tofu smothered in miso paste. Then in the Edo period (1603-1868) dengaku began to be served with broth which became the forerunner of Oden as it is known today, made from fish broth combined with Japanese soy sauce filled with fishcake, radish, konjac noodles, Tofu, Egg etc.
Oden originally has many types according to region / city in Japan. Every region has their own recipe. Example; Nagoya has thick oden’s broth, darker color. It’s made of Hatcho miso, sanonto sugar (a kind of palm sugar) and sake. The broth color is similar to Indonesian semur but without spices. Other region is Kyoto. It has light oden’s broth with light brown color. The taste is light salty, Japanese soy sauce, and rich in broth of kelp and skipjack of tuna (katsuo dashi). Kyoto's oden is a type of Oden that is sold in Indonesia and popular.
The Increase of Japanese restaurants in Indonesia also enhances this dish. Meanwhile, this dish also sells well in the convenience store.
